Pork Marinade
|
Ingredients:
- 1 1/2 c sea salt
- 1 cup soy sauce
- 1 cup rice vinegar
- 1 cup lime juice fresh
- 2 tablespoon lime zest
- 5 tablespoon peppercorns
- 8 garlic cloves, minced
- 1 cup burgundy wine
- 1 1/2 gallons Water
Directions:
Mix all ingredients in a large stock pot. Stir until salt is dissolved. Add meat; cover and refrigerate for a minimum of 6 hours.

Korean Marinade
|
This is a good marinade for Ribs, Steak, or Chicken
Ingredients:
- 6 tablespoons soy sauce
- 3 tablespoons white sugar
- 2 tablespoons sesame oil
- 1 green onion, chopped
- 1 clove garlic, minced
- 2 tablespoons toasted sesame seeds
- 1 tablespoon all-purpose flour
- 1 pinch ground black pepper
Directions:In a medium bowl, mix together the soy sauce, sugar, sesame oil, green onion, garlic, toasted sesame seeds, flour, and pepper. Place meat in the marinade, cover, and refrigerate for 30 minutes, or overnight.

Lemon Marinade
|
1/3 cup lemon juice
3 tablespoons French's Worcestershire Sauce
2 tablespoons oil
1 tablespoon honey
1 teaspoon salt
1 teaspoon grated fresh lemon peel
1/2 teaspoon ground black pepper
1/4 cup chopped green onion with tops
Directions:
Combine ingredients; reserve a portion of the marinade for basting and refrigerate. Pour remaining marinade over chuck steak. Marinate overnight in refrigerator.

Beef Kabob's Marinade
|
Ingredients:
1/2 cup catsup
2 tablespoons Kitchen Bouquet
2 teaspoon mustard
Dash hot sauce
(Favorite Brand)
1/2 cup honey
2 tablespoons vinegar
Directions:Mix the above and brush on beef (or chicken) and veggies after skewered. Brush remaining marinade on kabobs as they cook.

Sherry-Soy Marinade
|
Ingredients
- 1/2 cup canola, vegetable, or peanut oil
- 1/2 cup dry (not cooking) sherry
- 1/4 cup low-sodium soy sauce
- 2 tablespoons Asian sesame oil
- 2 tablespoons peeled and finely chopped fresh ginger
- 2 cloves garlic, peeled and finely chopped
- 1/4 cup coarsely chopped cilantro leaves, tightly packed
- 3 whole scallions, sliced
- 3 tablespoons rice wine vinegar (or white vinegar)
- 1 tablespoon Annatto (achiote) paste
- 2 tablespoons ground cumin
Directions
Combine all ingredients in a saucepan and heat to just below the boil. Remove from the heat. Cool. This marinade may be stored in a refrigerator up to 2 weeks. Use to marinate chicken, shrimp, or pork for several hours before grilling.

Pineapple Marinade

Sweet Pineapple Marinade That Goes Well With Chicken And Pork
Ingredients:
- 1 cup crushed pineapple
- 1/3 cup soy sauce
- 1/3 cup honey
- 1/4 cup cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger powder
- 1/4 teaspoon powdered cloves
Directions:
Mix all ingredients together and use immediately or store in airtight container for up to 7 days.

Vegetable Marinade

Ingredients:
1/3 cup vinegar
1/3 cup corn oil
1 saccharin grain
1 tablespoon dill weed
1 teaspoon lite salt
1 teaspoon pepper
1 teaspoon garlic
1 bunch broccoli, washed and chopped into bite size pieces
1 pound fresh mushrooms
2 medium onions, sliced into rings
Raw chopped cauliflower
Directions:Combine first 7 ingredients. Add chopped vegetables and mix well; cover and chill in refrigerator overnight

All Purpose Marinade

This is a delicious and easy to make all purpose marinade that is good on steak, brisket, ribs or chicken.
3 cups dry white wine
1/2 teaspoon cayenne pepper
1 teaspoon onion powder
1/2 cup soy sauce
1/2 teaspoon garlic powder
Mix all ingredients together. Marinate the meat (beef, pork, chicken, or for 3 to 6 hours, then use the marinade as a basting sauce as the meat cooks on the grill.

Grilled Steak Marinade

Ingredients:
2-1/2 tablespoons brown sugar
1-1/2 tablespoons sugar
1 tbsp. ground ginger
1 clove garlic, crushed
1/2 cup soy sauce
1 tablespoons tarragon vinegar
Directions:
Combine all of the ingredients. Put meat into a large shallow dish and pour soy sauce mixture over meat. Allow to marinate at least 30 minutes, basting.

Red Wine Chicken Marinade

Ingredients:
2 cups dry red wine
1 bunch scallions, sliced
1 clove garlic, minced
1/2 cup olive oil
1/4 cup soy or teriyaki sauce
2 tablespoons dark brown sugar
1 teaspoon grated fresh ginger
1 tablespoon Worcestershire sauce
Mix together, Use as is for marinade or boil for 10 minutes and use as a basting sauce

Spareribs Marinade
|
Ingredients:
1 medium onion, chopped
2 stalks celery
5 cloves garlic
1 cup vegetable oil
1/2 cup balsamic vinegar
3/4 cup rice vinegar
1 tablespoon coarse ground black pepper
1 tablespoon fresh sage
Mix the onion, celery, and garlic together. Combine the oil, vinegars, pepper and sage and add to vegetables. Soak spareribs over night in marinade for best results. Baste ribs with marinade while cooking. Shake a little salt on ribs when they are done

Jack Daniel's Steak Marinade

Try this easy to make Jack Daniel's Steak Marinade,
Just like the original Jack Daniels Steak Marinade
Recipe.
Ingredients:
- 4 oz Jack Daniels Whiskey
- 3 TB Honey
- 3 Tb Worcestershire Sauce
- 1 tsp White pepper
- 1 TB Tabasco sauce
- 2 Garlic cloves minced
- 1 TB cinnamon ground
- 12 oz Guiness Stout
- 4 oz Peanut oil
- 3 tsp salt
- 2 oz Soy sauce
Directions:
Start with a saucepan. Mix the Guiness Stout, the Jack Daniels & the oil. Add the Worcestershire & tabasco sauce. Bring to a slow boil & add the white pepper, garlic, salt, cinnamon, & honey. Mix well, turn off heat, and allow to cool to room temp. Use immediately or store in a glass jar in refrigerator for up to 1 week.

Easy Chicken Marinade

Ingredients:
- 1/4 cup vegetable oil
- 1/2 cup lemon juice
- 2 tablespoons minced onion
- dash salt and pepper
- 1/4 teaspoon paprika
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley
Directions:
Mix all ingredients. Cover and refrigerate for 30 minutes before using. For grilled or broiled chicken, pour marinade over 2 to 3 pounds of chicken pieces; refrigerate for 4 hours or more. Do not re-use marinade.

Barbecue Chicken Marinade

Ingredients:
1-2 cloves garlic, minced
1/4 cup oil
1/4 cup soy sauce
1 tablespoon onion or 1/2 chopped onion
1 teaspoon sugar
1/4 teaspoon curry powder
Marinate 4-6 pieces of chicken in above for at least 24 hours and grill.

Brisket Marinade

Ingredients:
- 1 1/2 cups red wine
- 1/2 cup olive oil
- 1 1/2 tablespoons mustard
- 1 1/2 tablespoons lemon juice
- 1 tablespoon wine vinegar
- 1 tablespoon horseradish
- 1 1/2 teaspoons salt
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Directions:
Mix all ingredients together. Pour over brisket and let marinate overnight in the refrigerator, turning occasionally. Remove brisket from marinade and boil remaining marinade for 5 minutes to use as a mop

Cajun Shrimp Marinade
|
Ingredients:
1/2 cup vegetable oil
1/4 cup soy sauce
1 teaspoon freshly grated lemon peel
1/4 cup fresh lemon juice
1/4 cup fresh parsley
2 tablespoons each Worcestershire sauce and red wine vinegar
1 tablespoon dry mustard
1/2 tablespoon paprika
1/2 tablespoon minced garlic
1/4 teaspoon ground red pepper
Marinate raw peeled and deveined shrimp for 1/2 hour. Thread shrimp on skewers and grill. Reserve marinade for dipping.

Chicken Wing Marinade

1 cup water
1 cup soy sauce
1 tsp. ground ginger
1 cup sugar
1/4 cup oil
1/4 cup pineapple juice
1 teaspoon garlic powder
Mix all ingredients together. Pour over chicken wings and let sit overnight. Refrigerate. Bake wings uncovered at 350 degrees for 45-60 minutes.

Caribbean Jerk Marinade
|
3 jalapeno chiles, stems and seeds removed
2 tablespoons chopped green onions
3 teaspoons allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons water
1 tablespoon honey
4 teaspoons fresh lime juice
1 teaspoon steak sauce
In blender container, combine all ingredients; blend until smooth. Pour mixture over pork cutlets, pork tenderloin, boneless skinless chicken breast halves, or chicken or pork cubes for kabobs. Let stand at room temperature for 15 minutes to marinate. Makes 1/3 cup, enough for 4 servings of meat.

Steak Marinade
|
Ingredients
1/3 cup oil
1/3 cup soy sauce
1 TSP ground ginger
1/3 cup brown sugar
2 cloves minced garlic
1/4 cup onions minced
Mix all together in a zip-lock bag.
Place steak in bag and marinate overnight
in refrigerator.
Remove steak from marinade and grill 5 minutes
on each side for a rare steak
